  • 1 C Beef Stock (divided)
  • 1 C Matchstick-Style Carrots (chopped)
  • 4 Garlic Cloves (minced)
  • 1 lb. Extra Lean Ground Beef
  • 1 C Diced White Onion
  • 1 C Frozen Green Peas
  • 1 tsp Cracked Peppercorn
  • 3 C Prepared Mashed Potatoes
  • 2 tsp Cornstarch
  • 2 Tbsp Tomato Paste
  • 1 Tbsp Worcestershire Sauce

Instructions

1. Preheat the oven to Broil. 2. Place an oven-safe skillet over high heat. Add the ground beef and cook, breaking up the meat, until browned, around 5 minutes. Prep the veggies while the beef cooks. 3. Add garlic, onion, and carrots, and continue to cook for another 2 minutes, or until the carrots and onion are just softened. Add the tomato paste, stir it in, and cook for 30 seconds. 4. Combine the cornstarch with ¼ cup of the beef stock and add the slurry to the ground beef mixture. Add the remaining ¾ cup beef stock, Worcestershire sauce, salt, pepper, and peas. Stir gently to combine and cook for 2 minutes. 5. Spoon the mashed potatoes over the beef mixture and spread evenly over the top. Then place under the broiler for 5 minutes, or until lightly browned. 6. Carefully remove from the oven (the handle is hot!) and garnish with paprika, salt, and pepper. Serve warm.
