Ingredients

  • 4 Granny Smith apples, peeled, cored and chopped
  • 1/3 cup brown sugar, packed
  • 1/4 cup butter
  • 1 tsp cinnamon
  • 1/2 cup softened cream cheese
  • 1/2 tsp nutmeg
  • 1/2 cup granulated sugar
  • 6-8 whole wheat tortillas

Instructions

1. Preheat oven to 375 degrees. 2. Prepare a casserole dish by spraying with cooking spray (6 tortillas will fit in an 11X7 pan while 8 will need a 9X13 pan or equivalent). 3. Mix apples, granulated sugar (1/2 c), cinnamon and nutmeg in a medium bowl. 4. Microwave tortillas for 30 seconds. 5. Fill each tortilla with apple mixture and approximately 1 Tbsp of cream cheese. 6. Roll the tortilla around the apple and cream cheese. 7. Place each enchilada seam side down in the prepared casserole dish. 8. Repeat for each tortilla. 9. Pour any remaining apples around the enchiladas in the pan. 10. In a small sauce pan, heat Sauce ingredients over medium high heat until boiling. 11. Remove from heat and pour over the enchiladas. 12. Bake for 40 - 45 minutes or until enchiladas are crisp on top and apples are cooked. 13. Serve with vanilla ice cream.
