Ingredients

  • 1 Can Apple Pie Filling
  • ½ cup Brown Sugar, packed
  • ½ cup Butter
  • Cinnamon
  • 8- 6-inch Flour Tortillas
  • ½ cup White Sugar

Instructions

1. Preheat oven to 350 degrees and butter a 7x11 baking dish. 2. Spoon about 1/3 cup of the pie filling off center into each tortilla and sprinkle with cinnamon. 3. Roll up, making sure to tuck in the edges, and place seam side down into the baking dish. 4. In a medium saucepan, bring both sugars, butter, and water to a boil. 5. Reduce the heat, and simmer for about 3 minutes, stirring constantly. 6. Pour over the enchiladas and sprinkle with extra cinnamon if desired. Let stand for 30-45 minutes (This allows for the sauce to soak into the tortillas). 7. Bake in oven for about 20 minutes or until golden brown. I also placed mine under the broiler for a few minutes after baking to get a deeper golden color. 8. Serve with ice cream or whipped cream!
