Ingredients

  • 2 slices Italian bread, cut thick
  • 2 Tbsp. butter
  • 2 extra large eggs
  • 2 - 4 fried Italian long hot peppers

Instructions

1. In center of your sliced bread, gently cut a hole. Remove the cut pieces and set aside. 2. Over medium heat, place a big pat of butter in your pan and add the hot peppers. 3. Once the butter is melted, add the bread to the pan and fry the first side. 4. When it’s sufficiently golden, flip to the other side. 5. Break an egg in the center, and fry until cooked but yolk is soft. 6. Top with a couple of hot peppers, a drizzle of oil, rosemary and salt and pepper to taste. 7. Enjoy!
