  • ¼ teaspoon paprika
  • 2 whole wheat pitas
  • 1 tablespoon diced red onion
  • ¼ teaspoon dried thyme
  • 1 small Roma tomato, sliced

Instructions

1. In a large skillet over high heat, add 1 tablespoon of olive oil and chickpeas and stir until the chickpeas are well coated with the olive oil. 2. Immediately add the garlic powder, thyme, oregano, and paprika. Continue to cook on medium-high heat for 9-10 minutes, stirring occasionally, until the chickpeas are golden brown. 3. To make the tzatziki sauce, stir together 1 tablespoon olive oil. Greek yogurt, lemon juice, grated cucumber, and salt. 4. Once the chickpeas are cooked, divide them between the pita and top with tzatziki sauce, cucumber slices, tomato slices, and/or diced red onion.
