  • 8 yellow corn tortillas, for serving
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Juice of 1/2 lime
  • 4 large portobello mushroom caps, sliced (16 oz if you buy pre sliced)
  • 1/4 cup olive oil
  • 1 large onion, sliced
  • 1/4 teaspoon paprika

Instructions

1. Preheat oven to 450 degrees 2. Add mushrooms, onion, and bell pepper to a large glass casserole dish 3. Add salt, pepper, cumin, chili powder, garlic powder, onion powder, paprika and olive oil 4. Use your hands to mix until vegetables are evenly coated with oil and spices 5. Bake at 450 degrees for 15 minutes, then remove from oven to stir 6. Bake an additional 5-10 minutes, until roasted and caramelized 7. Once vegetables are done roasting, squeeze half of a lime over them and stir 8. Serve on corn tortillas with sliced avocado
