Ingredients

  • 1 lb. asparagus (preferably thin, trimmed)
  • 1 cup breadcrumbs (Italian-style)
  • 2 eggs (beaten)
  • 1 cup all-purpose flour
  • 1/4 tsp. garlic powder
  • 1/2 tsp. lemon zest
  • 1 cup mayonnaise
  • 1/2 tsp. paprika

Instructions

1. Rinse 1 lb. asparagus in cold water and pat dry. 2. Add 1 cup all-purpose flour to a large dish or platter. 3. Combine 1 cup Italian-style breadcrumbs, 1/4 tsp. garlic powder, and 1/2 tsp. paprika on a separate plate or platter. 4. Add 2 beaten eggs to a large bowl. 5. Dip asparagus in eggs, then roll in flour. Dip in the eggs again, then coat in breadcrumbs. 6. Transfer breaded asparagus to the tray of your air fryer in an even layer.
