Instructions

1. Hull the strawberries, then cut them into quarters. Place in a large bowl. Toss with 1/2 cup (100 grams) sugar and 1/2 cup (120 milliliters) of the water. 2. Cover and refrigerate 1-2 hours. 3. Transfer strawberries to blender and puree until smooth. 4. Place a large wire sieve over a large bowl and pour in pureed strawberries. Use a spoon to help push liquid through. Discard remaining seeds. 5. Stir remaining 4 1/2 cups (1 liter) water into the strained strawberries. Adjust sweetness as desired. 6. Chill in refrigerator until ready to serve. 7. Immediately before serving, add ice, lime wedges, fresh mint, and/or chopped strawberries if desired.
